Cooked this last night and realised quite how simple it actually is.. I think a veggie version could be done, and would be not unlike leek and potato soup, but with more Stuff in (hmmm, sweet potatoes might be good in such a thing...)
Chowder
(serves 4, or 2 for 2 meals)
Medium onion OR 2 medium leeks
2 rashers smokey bacon
1-2 green peppers
about 1/2 pound of potatoes, chopped into 1 inch cubes. Used some of those baby new pots last night, which worked really well.
small tin sweetcorn
2 tbs plain flour
1 cube fish stock or equivalent, dissolved in a pint and a half of mixed hot water and milk
salt, pepper, 2tsp dried parsley, bay leaf, sprinkle of paprika
Mix of assorted fish/shellfish to taste: e.g. 2 fillets white fish (cod/haddock, etc), small amount of smoked fish (e.g. smoked salmon bits), prawns, mixed frozen seafood, fresh clams - whatever you fancy really.
small tub of cream (optional)
Chop the bacon into bits and fry in a large pot with a mix of butter and plain cooking oil until crispy. Add the onion (chopped) or leeks (sliced) with the parsley and cook until squishy and a bit gold. Add the rest of the veg and keep cooking on a medium heat for about 5 mins. Stir in the flour and cook for a minute or two, then add the stock+milk, paprika and salt and pepper. Bring to the boil, then turn down.
Put the lid on and cook on a medium heat, stirring every so often to get the sticky bits off the bottom, for about 20 mins or until the potatoes are cooked. Chop the fish into similar sized chunks to the potatoes and chuck it in, put the lid back on and leave for about 5 mins. Stir in the cream and serve with crusty bread.
Mmmmm... I'm really hungry now, am off to find some lunch!!!
