The joy of random food discoveries.

Roasted lamb chops with garlic and potatoes - need green veg to go with it. Only thing in the fridge is half a pack of spinach that really needs eating. The joy of Google gives me this recipe. A few tweaks later gave me the following, which was good on its own, and *astonishing* with the lamb.

Spinach with Garlic and Pine Nuts

1x v. small garlic clove
1/2 pack spinach
handful pine nuts
swizz of lemon juice/balsamic vinegar (had no balsamic but the lemon seemed to work)
salt and pepper to taste
butter/olive oil (I used the fat that had come off the roasted lamb)

Chop the garlic finely and cook gently in the oil for a couple of minutes. Add the pine nuts, then the spinach and turn the heat up. Season to taste and wilt the spinach. Chuck the acid stuff on the spinach and serve.
