Aioli

 Thrusday night I finally gave into my craving for hummus and made a big ol' butt load, I think I have about three varieties that I spent about an hour making in the blender. (note to self acquire food processor or blender will start flipping the bird instead of blending....)

I've been really wanting to take a stab at Aioli for some time now and finally I think I have all the ingredients I need. I've been entertained/annoyed trying to find a recipe. Entertained in a way that includes, since this is an old old olde recipes there are thousands of ways just to make the base. Annoyed because the last time I had Aioli it was done by a very good chief and it was with Japanese mustard with tempura shrimp. Because I have that flavor in my head I fear that what ever I make shall not live up to it...

now the worst part of all of this is that the more I think about this recipe there are others that I want to make now, one that I've made before that is a very yummy condemit, garlic yogurt cucumber stuff that I"m sure has a name but I don't know it and it's greek. And the other is a rice and squid ink dish, either like a fried patty or paella... Both I've had before the patty at Black Salt and the paella at Nasu Blanka before it was closed down for being unrealistically expensive ($6 beer special... really?)

well I'm off to manipulate some garlic, I'm sure I'm driving my roomie crazy with the smell of garlic in the house...
