I have been sick since Saturday and haven't been up for cooking. I still shouldn't really be in the kitchen but I wanted to cook for my guy.

This is from a recipe at posie's place.

Alterations:
- Homemade garlic & herb cream cheese, below
- Homemade fajita seasoning mix, below
- Whole chicken instead of just the breasts
- More cheddar



Garlic & Herb Cream Cheese
From Recipezaar

Ingredients
1 1/2 teaspoons finely minced garlic
3/4 teaspoon italian seasoning
1/4 teaspoon salt, plus
1/8 teaspoon salt
1/8 teaspoon onion powder
12 ounce philadelphia whipped cream cheese

Directions
1. In a medium bowl, combine garlic, Italian seasoning, salt, and onion powder.

2. Add cream cheese and gently fold in the seasonings, being careful not to overmix as the cream cheese will lose it's"fluff".

3. Allow the flavors to blend by storing in an air-tight container in the refrigerator for at least 1 hour.

4. Stir once more before serving.

Alterations:
- Less than 8oz. tub of cultured cream cheese, not whipped



Fajita Seasoning Mix
From Busy Cooks Quick and Easy Cooking and Recipes

Ingredients
3 Tbsp. cornstarch
2 Tbsp. chili powder
1 Tbsp. salt
1 Tbsp. paprika
1 Tbsp. sugar
2 1/2 tsp. crushed chicken bouillon cube
1 1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp cayenne pepper
1/4 tsp. crushed red pepper flakes
1/2 tsp. cumin

PREPARATION:

1. Combine all of the ingredients in a small bowl.

Makes the equivalent of 3 packets of commercial or purchased Fajita Seasoning Mix.
