The name of this dish is actually
Green Chile + Chipotle Mayo Burger, but I didn't serve with chiles. I bought green salsa to serve on it (instead of the can of chiles) and then ate it all. I also didn't want to call it a burger since it's not between bread. And since I take issue with the term "open-faced sandwich," I won't call it that. So my title was the best I could come up with, considering the limited amount of brain power I have remaining after a particularly strenuous workday.
In any case, here are my modifications:
- 2 lbs beef to make 8 patties
- Goat cheddar
- Substituted green salsa for canned green chiles I eated it
- Sauteed onions instead of grill
- Cooked patties on cast iron pan instead of grill
I also had intended to
spread mustard on the patties while they cooked per Nom Nom Paleo's suggestion, but then I forgot.
This turned out delicious. The instructions make it seem like a lot of steps because you're making chipotle mayo and guacamole, but it's totally manageable, especially if you have another set of hands helping you like I did. The whole process took less than an hour. I will definitely be adding this recipe to my regular rotation.
