fry-day, breakfast: cronuts

This would have been cuter yesterday, but oh well. Anyway, today is DH's Faturday, which is his break day from the diet. That means he gets to eat whatever he wants. This morning, I decided to make cronuts - or rather solid fried croissant dough. And because we had all this oil still in the pan, I decided to make it a day of fried foods. But not fried butter or jelly beans. Actual food.




I set up a half sheet jelly roll pan lined with paper bags and an upside cooling rack to drain the food after frying. Later, I will post a picture of the whole set up with the dredging station and the batter. I'll be using these instructions to make the tempura batter. It was quite a pain because the writer did not include a list of ingredients, but rather just included the measurements in the instructions. Here is the list I gleaned from the instructions:
Oil for frying
1/4 cup toasted sesame oil
1/2 cup cake flour for dredging
2 egg yolks
2 cups of cold water
1/4 cup ice cubes
2 cups cake flour for batter

I will also be using this how-to for cutting the shrimp straight. I have been looking for a recipe for tempura sauce, but can't seem to find one that doesn't include dashi, which I don't have on hand. We might have to go to the store to buy some.
