zucchini boat chicken enchiladas

In an effort to accommodate DH's diet, I have been looking at new recipes for me to cook. We both like zucchini, so I decided to try this Chicken Enchilada Stuffed Zucchinic Boats recipe from Skinny Taste. I've never tried this site before, but the recipe looked pretty good.

We bought a big bag of zucchini from Costco to use for this and other recipes, but many of the zucchinis in the bag turned out to be less than optimal. Additionally, I overcooked them because I left them in the boiling water a little too long and didn't immediately rinse with cool water. I also didn't do a very good job scooping out the innards, and I didn't include the innards in the chicken.

And now that I think about it, I didn't follow the recipe so much as I just copied the idea. I cubed 2 chicken breasts and fried it up with some onions and taco seasoning and used my usual green enchilada sauce, so it doesn't have the nice contrast that the OP pictures have.

It certainly isn't as pretty as the recipe pictures, but it turned out ok. DH liked his but my zucchinis were bitter. Hopefully the next serving will be better. But I probably won't make it again because it's a lot of dishes to wash: 1 pot for boiling the zucchini, 1 pot for making the enchilada sauce, 1 pan for cooking the chicken, 1 pan for baking it all together = 4 pots and pans! I did get a lot of use out of my Corningware, though.

We went to Costco today, so I'm hoping to get away with not grocery shopping for about 2 weeks. We bought enough food to last us that long, certainly. I'm not used to shopping for long-term and I found planning for it difficult. We'll see how it goes. We bought a prepared beef thing that DH will probably cook, a bunch of chicken, sandwich things and some frozen food. We also bought some fresh produce, which will be nice for a change. I'm going to try some recipes with cauliflower as a carb substitute, like this mac and cheese cauliflower or this cilantro lime "rice" side dish. I'll probably make that the next time I make carnitas.
