turkey day: the brine

The brine got everywhere, but I managed to cram it back into the tote bag to increase the turkey's contact area with the brine. I used a turkey oven bag doubled up with a garbage bag. The brine was not 100% cool when I put the turkey in, and the turkey wasn't 100% thawed, so I hope this turns out ok. I read somewhere that turkey leftovers are only good for 3 days, so I may be freezing more than I originally thought.
