oatbread from King's Landing

This time I made the oatbread with 1 cup of oat flour, 1 cup of AP and 1/2 cup of white whole wheat flour. I want to decrease the amount of AP without compromising the taste or texture of this wonderful loaf. My plan when I started making this today was that if it turned out well, I would just stick with this ratio, and if it didn't turn out well, I would stick with the mix of flours I used last time. I was a little concerned about how the bread would turn out because the dough was much more sticky than it was last time even after I added a good amount of flour.

I imagine the wetness of the dough is at least partly why the dough spread out rather than rose. They look more like giant cookies than loaves of bread, especially without the oats on top, which I forgot to add.

My bread machine has been making a strange noise ever since I got a new paddle. The noise doesn't seem to be interfering with the function, but I'm just concerned. The machine is only 3 years old, so I don't think it should be making weird noises yet. My theory is that the noise is caused by the new paddle fitting more loosely than the old paddle.
