jadedfrenzy's Lemon Squares
- Combine about 2 cups flour, 1/2 cup powdered sugar, 2 tbs cornstarch, and around 1/4 tsp salt.
- Cut in about 3/4 cup butter until the mixture looks like coarse crumbs.
- Grease a 13x9x2-inch pan and press the mixture into the bottom of it to create the crust.
- Bake at about 350 degrees for I would say anywhere from 17 to 20 minutes (my oven is strange so it's hard for me to gage this) or until the edges are golden
- Then, for the filling, mix together 4 slightly beaten eggs, about 1 1/2 cups granulated sugar, 3 tbs flour, a little bit of finely shredded lemon peel (maybe like 1 tsp), 3/4 cup lemon juice, and 1/4 cup milk (or you can use half-and-half or light cream)
- Pour this over the hot crust in the pan.
- Bake for 15 to 20 minutes (basically just make sure that then center becomes set)
- Cool (on a wire rack is best) and then you can sift powdered sugar over the top.
- Cut into squares and store in the refrigerator. Tastes best cold!!
