oh my god....

A beautiful bunch of fresh, tender carrots, divested of its greenery and chopped into succulent chunks, glaringly orange and perfectly sweet...

A sweet onion, white and gorgeous, mild as a lamb, chopped into little pieces and sauted in sweet, foamy melted butter with the perfect little pieces of carrot...

A perfect little chicken, cut up into its manageable parts and added to the pot with the onion, the carrot and the butter till lightly golden...

Sprinkled over all with salt, pepper and the white homeyness of flour....

Simmered till all blend into a comforting softness...

A cup of white wine, fragrant and tangy....

Three cups of chicken stock....

A half pound of perfect white mushrooms...

A handful of herbes de province...

Simmered down to melded bliss...

And at the end, like a mother's kiss, a half cup of thick heavy cream...

All over wide noodles and served up, steaming and lush, like a cashmere wrap for the stomach....

Perfect food.

Absolutely perfect.
