It's very important that you put alot of effort right now into convincing them you're fine
I hate to say it, but I think you need to eat lunch with your parents for a week or so... If that's the only meal you eat you should be fine
Do you ever purge? Sometimes if you can't get out of a fattening meal it helps to purge afterwards (make sure you don't get caught!)
Unless you're parents serve you very high cal food for lunch, I doubt you'll gain weight- better to eat earlier in the day, b/c you have the rest of the day to burn it off... perhaps you could offer to prepare lunch if you're not too busy? That way you control the calories :)
Make a point to eat in front of them whenever you can... even if it's just an apple or salad or a few crackers... Whenever my mom's in the kitchen I often make a point to grab some pretzels from the pretzel jar, eat a couple, then throw the rest away or put them outside (I crumble them first)
Or, you could grab a bag of something (chips, popcorn, whatever's in the house), walk into a room where your mom or dad is, ask them something or tell them something (eating a bit while you do it), then leave the room and trash the food
Also, sometimes I'll tell my mom or dad I had the best _____ (ice cream, sandwich, slice of pizza, etc) today... Telling them excitedly about a meal you enjoy is sometimes enough to reassure them - assuming you bring it up randomly, not when they question you
