Lunchtime
Originally uploaded by Amy Grimes. Lunch today was subway and left over sausage, white bean and spinach soup. Marsi jumped up in the chair next to mine for a pet and the hope she will get a treat.

We don't mind that she joins us for every meal at the table. She's our eldest cat and understand the "no paws on the table" rule quite well. To reward her we occassionally give her a green bean, a bite of lettuce from our salad or a grape.

Marsi is a vegatarian cat.

The soup was easy to make and easily one of the best soups I'd ever made. The recipe follows: (I split this in half and we got at least 6 healthy sized bowls of soup)

Sausage, Beans and Spinach soup

2 Tbls olive oil
1 1/2 lbs italian sweet sausage
1 medium onion, chopped
1 carrot chopped
1 large potato peeled, chopped into small dice
2 cloves garlic
1 bay leaf
2 cans white beans, drained
salt and paper
4 cups chopped spinach
2 quarts chican stock
grated parmigiano-reggiano or romano to pass at the table

heat soup pot over med-high heat. add olive oil and brown the sausage. Add veggies, bay leaf and beans. Season with salt and pepper. ook mixture 5 minutes to begin to soften the veggies. Add the spinach and wilt. Add stock and potatos and cover pot. Raise heat and bring to a boil. Reduce heat to simmer and cook 15 minutes. Dish out and top with grated cheese.
