Super Healthy Oven Puffed Pancake-Basic Recipe

Ingredients:
  • 1/2 cup all-purpose flour
  • 1/2 cup fat-free milk
  • 2 tablespoons Splenda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 large egg white
Directions:
  1. Preheat oven to 425°.
  2. Combine all ingredients and stir until moist.
  3. Spray a 10-inch cast-iron skillet or oven safe pan over medium heat.
  4. Pour batter into pan.
  5. Cook 1 minute over medium heat (do not stir).
  6. Bake for 18 minutes or until golden.
  7. (This is the step where you are creative--add whatever you'd like to the top:  reduced apples with cinnamon, pie filling, fruit compote, etc. and put back into the oven for two minutes.)
  8. Cut into quarters and serve immediately.
