Creamy Tropical Oats

Ingredients:
  • 1/2 cup rolled oats
  • 1/2 cup coconut milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon maple syrup or agave nectar
  • 1/4 cup mixed tropical dried fruit
Directions:
  1. The night before, soak the oats and the fruit in the coconut milk.
  2. In the morning, place the oats in a saucepan, adding water to reach desired consistency.
  3. Bring to a simmer, stirring frequently.
  4. Add the vanilla, sweetener and salt.
  5. Cook for about 3 minutes or so, stirring often, until oats are gently bubbling.
  6. Pour into a bowl and top with almonds and a drizzle more coconut milk if desired.
