Ingredients:
- 6 large, firm, ripe tomatoes
- ½ cup green onion, chopped
- ¼ cup celery, chopped
- 2 tablespoons Butter Buds
- ⅔ cup cooked brown rice
- ½ cup seitan wheat meat, shredded
- ⅛ teaspoon pepper
- ¼ teaspoon basil
- Dash of cayenne pepper
Directions:
- Cut ¼ inch slice off top of each tomato
- Scoop out pulp and reserve
- Turn tomatoes upside down to drain
- Place onion, celery, and Butter Buds in 1 quart casserole
- Heat on full power two minutes or until onion and celery are tender
- Add tomato pulp and remaining ingredients to onion and celery
- Spoon mixture into tomatoes
- Place in casserole dish
- Cover loosely with plastic wrap
- Heat on full power for three minutes
