Mango, Peach and Pineapple Salsa

Ingredients:
  • 2 mangos, peeled, seeded and chopped
  • 2 small peaches, halved, pitted, and cut into 1/2-inch dice
  • 4 tomatoes, chopped
  • 1 white onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup diced fresh pineapple
  • 1 cup chopped fresh cilantro
  • 1 clove garlic, minced
  • 1 jalapeño (for spicy salsa, do NOT remove the seeds from the pepper)
  • 2 limes
  • 1 teaspoon salt
  • 2 tablespoons white sugar (or artificial sweetener), or to taste
  • 3/4 cup water
Directions:
  1. Make sure you dice all this stuff up REALLY SMALL.
  2. Put the diced fruit and veggies in a large bowl.
  3. Add water, sugar, salt, and juice of two limes to the bowl.
  4. Mix well.
  5. Cover and refrigerate for AT LEAST one hour before serving.  The longer it blends, the better it is.
