Crock Pot Seitan Stew

Ingredients:
  • 1 pound seitan, chopped
  • 1 onion, diced
  • 5 cups vegetable broth
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 3 carrots, diced
  • 3 potatoes, chopped
  • 2 stalks celery, diced
  • 1 tsp salt
  • 3/4 tsp pepper
  • 4 tbsp cornstarch mixed with 4 tbsp water until smooth
Preparation:
Place all the ingredients in a crock pot or slow cooker. Cook on low for 6 to 8 hours.
Sauté the seitan in a little bit of olive oil first, if you'd like. If you're pressed for time, you don't need to, but it will give the seitan a bit of extra flavor if you do.

UPDATE:  This stew is absolutely amazing.  It is so good.  However, it does NOT freeze well at all.  If you are going to make it, make sure that you will eat it over the course of a week, or adjust the recipe down accordingly.
