Because someone asked me this morning to provide recipes for some of the things I eat, I've decided to add a healthy recipes section to my journal.
Ingredients
1California avocado1/4 cFrozen peas, thawed1 tbspLime juice1Med tomato, quartered1/4 cChopped onion1 tspMinced garlic1-2 tbspFresh cilantro leaves1Sm jalapeño pepper seeded1/2 tspGround cuminPreparation
1. Cut the avocado in half lengthwise around the seed. Scoop the flesh into a bowl.
2. Add the peas, lime juice, tomato, onion, garlic, cilantro, chili pepper, and cumin. Add salt and pepper to taste.
3. Place the mixture in a food processor or blender, and pulse to the desired consistency.
Makes about 1 1/2 cups.

My notes: I didn't think I'd like this, because I truly loathe peas, but the fact is, you can't even taste the peas. They add texture and volume while greatly reducing both fat and calories. This stuff is good!
