So, I never update this thing anymore. I do ridiculous rundowns of things that happen but because they're just lists they're boring.
What is it I should be writing about? I need something regular and interesting. I'm thinking about writing about what I cook, since that's definitely regular, and probably the most interesting thing about my life right now.
Two nights ago I made buffalo chili. Made with ground buffalo, chopped onions, chopped tomatoes, a little broth and chopped ancho chilies. Cooked on the stove for about an hour, till all the flavors meld. It's a wonderful dish, meaty, filling, but not too greasy. It goes really well with sage crackers from t'afia.
Last night I made seared chicken breasts with hatch pepper cream sauce. Chicken breasts simply sauteed in a little butter and olive oil, then put in the oven to keep warm. Used the fat left from the chicken to saute a bunch of chopped onions, then added broth, lime zest and fresh squeezed lime juice. Simmered for 10 min or so, til thickened, then added cream and sliced roasted hatch peppers. Yums! One of my favorite sauces- easy, creamy with a kick and a bit of tang from the lime. Best with a splash of tequila but I was plum out of tequila and not looking to buy any since we're moving soon (again!).
It's hatch chile season at Central Market so I'm eating a lot of things with hatch chilies this week. I love their hatch chile scones- I have them for breakfast with a smear of raspberry or apricot jam. Today for lunch I've got a hatch sourdough open face sandwich with ham, tomatoes and avocadoes.
Tonight for dinner I'll have the chicken breasts with cream sauce over some Mexican rice, probably with some melted cheese on top. Matt will have chili. Tomorrow is stir fry day. Yay, that gives me something to write about in the next few days!
