baked salmon, my version

okay so i assume you've heard me rave about the baked salmon appetizer at both Ichiban's and Wahada. i went back through my sushi posts, and this was the best picture i could find, which isn't very good (looks a bit burnt, but it's just the eel sauce caramelizing on the edges i'm sure). that one is from Ichiban's. it's slivers of salmon, mixed with shredded snow crab, drizzled in the eel sauce, and then baked (i think). the baked salmon at Wahada's is more like balls of salmon that are filled with the snow crab and masago, with the eel sauce on the outside, and also baked. both are warm and sweet yummy goodness.

so, i had some salmon, and i bought some imitation crab ($2 vs $6.50 for lump). i don't have eel sauce, but it tastes like soy sauce and sugar, and a recipe online said soy sauce, sugar, and sweet rice wine, so i went with that (it can also be made with ACTUAL EELS. do not try at home).

anyway, i mixed up some soy sauce and sugar and rice wine (cooking wine instead of sweet, but it's all i had so what the hell). i took some of my imitation crab legs and shredded them in the food processor, and mixed them up with my makeshift eel sauce. then i took the piece of salmon and sliced into several thinner strips. i piled each with the crab/eel sauce mixture, then rolled them up and set them on the pan. realizing i'd used all my eel sauce with the crab--and that i wanted some sauce on the salmon as well--i mixed a little more soy sauce and sugar, and drizzled that on the outside of the rolls. the majority of this ended up on the bottom of the pan after it drained down the sides of the rolls...and consequently became a bubbling burnt sugary mess on the pan, so i might rethink that step next time.

then oven baked for about 15 minutes at 400 degrees.

it may not look that great, but it's basically a roll of salmon and crab with soy sauce and sugar all over it, so how can it not be good?


i don't really consider this sushi, but i'm using my sushi icon because it's related.
