Very very strange weather. It seems way too early to be breaking out the skirts from the bottom of the closet. These sunshiny days just beg to go out hiking on campus or walk along the beach. Which is not a good temptation when a research paper is due and finals are approaching. But soon we can all give in because finals will pass by and then it will be spring break!
Break should be refreshing. I miss my family alot and it will be good just to get hugs. And on top of that I will no longer be a wedding virgin. I wonder if I'll be one of those people that cry at weddings.....ehhh not likely. And then Io will be visiting and we're gonna see the Getty and the Natural History Museum. I get to show him around the city, and he gets to meet my dad and brother. Guess that means I have to clean my room when I get there.
Oh and I just wanted to share the yummiest sugar cookie recipe, they were like almondy shortbread. Yipee for Alton Brown and almond extract
Almond Sugar Cookies
3 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened
1 cup sugar
1 egg, beaten
1 tablespoon milk
1 teaspoon almond extract
"Sift together flour, baking powder, and salt. Set aside. Place butter and sugar in large bowl of electric stand mixer and beat until light in color. Add egg and milk and beat to combine. Put mixer on low speed, gradually add flour, and beat until mixture pulls away from the side of the bowl. Divide the dough in half, wrap in waxed paper, and refrigerate for 2 hours."
Preheat oven to 375 degrees F.
Take out dough and roll it to a 1/4 inch thick on a floured or powdered sugared surface. Cut out cookies. Place on tray. If using flour, its recommend to add colored sugar to the tops of the cookies for added sweetness.
Bake 7 to 9 minutes or until starting to turn gold around the edges.
