Time for an overdue update!
Earlier in the month of November, Sam and I celebrated our 5th anniversary together. We spent the weekend together at the Omni Interlocken Resort here in Colorado. Ate lunch at their pub, then we went to our king suite on the top floor. My camera is on its way out, so I only got to take a few pictures.

Had a facial at their Mokara Spa (HIGHLY recommend them), then came back to our room, where there were chocolate covered strawberries and champagne waiting for us. :) Later we had a custom dinner in their restaurant, grilled chicken with roasted tomato and oregano salsa. Reisling wine to drink, and we finished it off with a tiramisu dessert that was absolutely delicious. We had a great time that weekend. :)
Finished my 3rd quarter last week at school. This quarter seemed like it was the world's longest quarter ever. I'm SO happy it's done. Now I only have to take a nursing ethics class tomorrow and next monday. I have a feeling it's going to be a terribly long day though, from 9-3. NOT looking forward to it.
Sam came over last Weds and we watched The Ultimate Fighter on Spike. I've really gotten into watching this recently. Last night we watched the finale of that show. Had a delicious sandwich from a recipe Sam brought over: Chipotle grilled chicken with avocado sandwich: http://simplyrecipes.com/recipes/chipotle_grilled_chicken_with_avocado_sandwich/ You should definitely try this out. It's sooo good!
I renewed my lease at my apartment, but this time only for another 7 months. I'm hoping some real estate of mom's will sell, and she and I can get a condo or townhouse together out here. I would so love her company. She'd only be out here for 6 months though, and I'd be there the whole time.
So that's what's gone on so far. Lots of fun has been had :)
