I have had quite a boring week. I've been in work 10-4:30 everyday this week and it has been taking it's toll. It isn't quite working 9-5, but I am on my feet all day and it gets really monotonous. Coming home, having team going to bed, waking up and doing the same the next day. I've had one day off in 5 days, then I am back in again tomorrow. I am not used to this! I'm usually only in uni 6 hours a week. I miss dossing around in my pajamas and surfing the internet for useless things all day and looking at pretty photos. Of course, I don't get paid for that and payday will be veryvery nice!

Me and Scott bathed Pepe on Monday, he is so cute all wet and skinny!

I have been baking, as always. I made red velvet cupcakes on Monday, which were nice but the icing was a bit sickly. Yesterday I made Scones aswell because I have never baked Scones for Scott and he loves them. Oh and here is the recipe for the apple and cinammon cupcakes







It's in cups, sorry!

Ingredients
Swirl and topping
- 1/2 cup of sugar
- 2 teaspoons ground cinnamon

Cakes
1 cup grated apple
2 tablespoons cinnamon sugar (from above)
1 1/4 cups plain flour
3/4 cup sugar
3/4 tsp baking powder
1/4 tsp salt
2 large eggs
1 cup canola oil (I used groundnut oil thought)
1 tsp vanilla extract
3 tablespoons unsalted butter, melted

Method
- Preheat oven to gas mark 4.
- Mix the swirl and topping, stir the sugar and cinnamon together
- Mix the apple and 2 tablespoons of cinnamon sugar together and set set
- Stir the flour, sugar, baking soda and salt together. Make a well in the centre and add the eggs, oil and vanilla stirring until smoothly blended.
- Stir in reserved apple mixture and juices.
- Spoon the mixture into the cupcake cases, adding 1 teaspoon at a time, then sprinkling ontop the cinnamon sugar and layering the mix and sugar together.
- Dab the tops of the cakes with melted butter and put remaining cinnamon sugar ontop.
- Bake for 25 mins, cool for 10.

Tonight I'm going to see Sex and The City! I'm going to wear my new shoes that I am still besotted with and hope that the rain doesn't ruin them. It is june now! My birthday next month! Before I know it I'll be back in uni. I went and bought 4 books for my contemporary literature module and am going to start reading them when I finish Midnight's Children (which I am so veryvery engrossed in!).


Hmm books. I want to buy so many books and have a huge library but there is just not the time to read them all in!
