Thai Pork with Peanut Sauce
This one was a win!  We baked it in the oven instead of using the slow cooker, which took about and hour at 375ish.  Served over rice this was very tasty and filling.  In the future I might double up on the veg as it was mostly meat.  We used the President's Choice terriyaki sauce which I will certainly buy again.  Serving size was just enough for 2 plus 1 serving left over for my lunch.

As side note about Skinny Mom's Kitchen, lots of recipes (including freezer and slow cooker cooking) all of which list the nutritional info.  So if you're a busy mom and calorie counting its a great resource =)
