Culinary venture no. 2 for the evening: peanut butter cookies!
First batch out of the oven is light, almost flaky in nature. They crumble like pastelitas de boda, which PB cookies shouldn't really do, in my universe. Not sure if this is from
1) slightly too long of a baking time
2) overbeating
3) use of hippie natural peanut butter with no emulsifiers (which ordinarily leaves a dry, crumbly texture in my mouth, and thus I suspect it)
or 4) use of hippie margarine-stuff because I had no canola oil and thought better of trying sesame oil.
Didn't bake the second batch quite as long, maybe they'll be softer.
