This is the chicken salad I made for dinner last night. I'm putting the recipe in here. The measurements are approximate since I had a taste in mind, and made it up to match it. Mom wanted me to email it to her too.
2 lbs. cooked boneless skinless chicken breast cut up
1 can pineapple chunks (save the juice)
green onions (about 4 or 5 big ones) cut up
1/4 cup sunflower kernels for crunch (maybe a little more)
mayonnaise or miracle whip (about three big blobs with a soup spoon, mix with the pineapple juice)
curry powder (about 1/2 of a soup spoon)
cayenne pepper to taste
dash red pepper flakes
get the chicken, pineapple, onions, and sunflower kernels good and mixed up in a big bowl.
Mix the pineapple juice, miracle whip, curry powder, cayenne pepper, and red pepper flakes in a little bowl.
After you get the dressing tasting like you want it, pour it over the other stuff and mix it up to coat.
Serve with dark green lettuce and rice.
Other stuff that happened yesterday and this week:
So many birds at CRC seem to be dying. Sybil the cry-baby Cooper is the latest. I used to clean her cage. She got the nickname of cry-baby because she sounded like a baby crying when she would yell at me for going in the Cooper cage. She used to lay eggs too, and she would sit on them and also tennis balls.
They have moved the Barred Owls while the set them up with a new display cage. Guilford is in a cage by himself now. He used to be one of the education birds so he's pretty good about not going crazy while I clean his cage. I was locked out of Cleo and Shakespeare's cage. I'll be able to clean it next week. That cage used to be Bonsai's and they forgot to change the lock to the one that is used for birds that aren't staff-only or restricted access. All the Barred Owls are molting so badly right now.
I really need to put up the fuzzy gourd video I made last week, because now I have two gourds that are nearly budgie-sized and will soon be even bigger. I don't think the one I was petting in the video got fertilized because it isn't one of the two that is growing. I think my pumpkins are going to be miniature ones. They are tomato sized, and a similar shade of orange to their flowers.
