The fries at both McDonald's and Hungry Jacks are gluten-free, and both places are willing to cook burgers grill-style without the bun on request. Indeed, at Maccas the fries and hashbrowns are both gluten-free and (in most places) cooked in a dedicated fryer so there is no cross-contamination. The chicken patties and the sauces in Oporto burgers are not gluten-free, sadly. The helpful person who responded to my email inquiry didn't tell me whether their fries are gluten-free, so I will ask in person sometime. KFC and Red Rooster fries are no-go, but Nandos are safe.
Toscani's, Avanti and Pizza Capers make gluten-free versions of their pizza, pasta and calzone on request.
Wheat glucose syrup, found in a lot of confectionary, is certified safe by that society for coeliacs. It's wheat starch that's not safe.
I'm still looking for readily available gluten-free fish/oyster sauce. Soy sauce is easy to find. I am also seeking an alternative to Worcestershire sauce for cooking.
