My friend Trip taught me a perfect way for making chai. He boils 1 cup of water and 1/2 cup of milk (he used soy when he was here) and 1 tsp of sugar and then adds the tea and lets it steep. It's so good! I have three kinds of chai in my tea drawer* (red, white and masala chai) and I love chai from coffee houses but had never successfully made it at home. I had just been brewing the tea and then adding either hot milk or regular milk or sometimes creamer to it and just never tasted right. Trip's method works like magic, though, and now I can't stop drinking chai!
At least one of the varieties has no caffeine, so it's not keeping me up at night.
* Yes, I have a designated tea drawer and once had to promise Erik that I wouldn't buy more tea until I used up something in the drawer. I've been mediocre about sticking to that, as you can tell by the fact that I ended up with three kinds of chai. The worse sign might actually be that I had to go look in the drawer because I wasn't sure if it was three or four.
