From what I've seen? I'm not about to say the show is perfect but I think there's a lot of interesting things in the set up and I have a storytelling kink for monster of the week type things. It's just... it's good and then it hits me with icky!
I'm really looking forward to Jo. idk I've liked her and Ruby and Bella out of spite cos of all the icky I've seen directed to them.
and like. I kinda dislike Dean right now but he's so cute and protective of Sam and haha i have such a thing for siblings. I feel like while watching this I will be torn between OMG SIBLINGS AND YEAH GHOST STORIES and WHY DO YOU DO THIS TO ME SHOW?
lol I kinda want to write a fanfic based off the first episode whereupon I tell the story though the point of view of the ghost girl to make it less icky.
The first two seasons are really amazing for me, and the third I love because it introduces two female characters I adored. After that, though, it got too much for me, and a new Bland White Male character got intro'd, and unfortunately, the show runners pay very, very close attention to What Fandom Wants, so now he's pretty much a hugely featured character. And they killed off every. single. woman. i liked. All of them. Horribly. Uselessly

Dean is one of those characters that you have to, like... you have to watch a lot of him and take him as his whole and even then he might not still be your guy. Because he IS gross a lot, and it depends on if you end up seeing him from the "he's gross because product of environment and he corrects himself when he's told" angle, or from the "it's ingrained in him and he's just like this" angle. He is basically everything people like him usually are: Immature, under-educated, convinced he's right most of the time until forcibly proven wrong, and then sullen about it. He's deeply flawed, and the show, I think, eventually cracks him open and shows you why and exposes all the insecurity and attachment issues and issues with women. Sam, IMO, makes him a much, much better person, frequently and without hesitation, because it's obvious he loves his brother and wants him to BE a better person

I'm okay with the immature, under-educated, convinced he's right most of the time until forcibly proven wrong. In fact, I kinda like it. I just... dislike how he treats women. If he starts getting better about that I might actually like it. It's like... right now I'm like 'YEAH DEAN I LIKE YOU' and then he's a sexist jerk and I'm like 'FU GO AWAY'.

It looks like most people have more or less made all the comments I was going to write. But yeah, the show and characters do change significantly from season to season. And I'll be honest, some of the later seasons aren't exactly my cup of tea. Even the monster of a week trend dies out as the series progresses.
All problems aside though, I do think the show has some wonderful moments and some awesome banter. Jensen and Jared have great chemistry together. Basically, if you're in it for one of the boys or the actors, you can more or less make it through the long haul.
I don't know how much of a completionist you are but it is possible just to watch the episodes you're interested in-- particularly if you're interested in the side characters like Bella, Ruby and Jo.
There's also a few episode where Dean does get emotionally invested in a woman or two which you might be interested in only because it gives the character more surface depth.
On the whole though, the series has tons of little jokes and random brotherly bits (like playing rock-paper-scissors and other nonsense) that just make the show kind of adorable win.
And this is neither here nor there, but the outtakes for the seasons are great if you just want a change of pace.
I love the adorable brother bits. Best part of the episode was when Sam tells Dean he should update his music collection because he has cassette tapes.
I watched the first three seasons and a handful of other episodes from the remaining seasons. The show itself has a lot of issues but I wouldn't say it's any better or worse than the rest of TV wrt sexism, racism, etc.
BUT THE FANDOM IS JUST ALL KINDS OF HORRIFYING. It's just so bad. I remember how whenever the creators announced plans to introduce a new female character, the internet fanbase was all THE SHOW IS NOW RUINED FOREVER. And the worst part is that the online fanbase is largely made up of women and I was like WTF?
The biggest example is how the fandom had a tantrum about Ruby because including a demon would be cliche'd but instantly fell in love with Castiel. Fuck fandom seriously. (Castiel's actor actually said in an interview that the reason that his character was so well received was the fact that he's a dude).

I really hope I'll grow to like Dean. I don't think he's a bad character. Sometimes I almost like him. And then he's gross and I want him to diaf.
