Chicken Pot Pie's

3 chicken breast cooked,deboned and chopped into bite sized pieces. 4 med potato's 1/4 bag of baby carrots 2 celery stalks 1/2 onion 1 clove of garlic minced 1 small container of heavy cream 2 tbsp of butter EVOO 2 pie crusts 1 egg beaten  Preheat the oven to 350 degree's. Chop veggies into bite sized pieces, sautee potato's carrots and celery in olive oil for five mins then add onion and garlic. When pieces are mostly soft add chicken, cream and butter. Cover and simmer for around 10 mins stirring occasionally. When cooked most of the way thru spoon into oven safe coffee containers. Using a cup with a lid slightly larger than the coffee cup cut out circles to cover dish. Brush with egg wash and cover the top of the cup, then brush the outside of the crust to achieve a beautiful golden brown. Cut holes in the center of each pie to allow room for continued cooking. Place in a baking dish allowing space between each cup. Cook for around 10=15 mins depending on how new your oven is and where you live. Remove when the crusts are a beautiful golden brown. Allow to cool for 10 mins before serving. This is a great comfort food if you are sick or if you are just cold as hell. :) It does take some cooking and prep time. Great for leftover chicken nite.
