I bought a big bunch of fresh mint at the city market a week ago and had to come up with some quick ideas for ways to use it up.

I haven't made baklava in ages and so I decided that making it again, now that I can take my own pictures, would be a perfect way to use up the last 12 sheets of phyllo pastry from the package dug out of my freezer recently. And, a good way to use up the last of the walnuts ( Read more... )

This dish is a Greek-Mexican fusion of some of my favourite ingredients wrapped up in a flaky phyllo pastry. You can shape it into triangles and serve it at room temperature, as an appetizer or, for a heartier and less fussy presentation, for family, layer it into a 9x13 inch baking dish and cut into bars.
