Italian Sausage, Onions and Peppers

Most of my cooking doesn't require a recipe. Which is a good thing at 7 pm when you've got nothing in the fridge and are tired from spending the afternoon making pouring custard, 8 macaroons with the egg white left over from making the custard and 2 dozen full sized cream puffs.

This is when my freezer and microwave are my two best friends.

To serve 2 hungry people you'll need: 4 hot Italian sausages, 4 hot dog buns, 1-4 slices of cheese of your choice (or whatever variety you find in your fridge), 1 medium onion, 1 large pepper, and a splash of vegetable oil for the frying pan.




Quick defrost half the package of hot Italian sausages and half the hot dog buns you have in your freezer in your microwave.

Pull your largest frying/saute pan with lid from your cupboards, add a splash of vegetable oil and put it on the stove. Fire up the stove to medium/medium-high and while it's heating up, cut up the onion and pepper (any colour will do) into thin strips. Dig out that last slice of (Havarti) cheese from your veggie crisper and divide it up into 4 thin strips.

Sear the sausages on all sides then remove them to a plate. Add your onion and pepper strips to the pan, sprinkle with a bit of salt and stir fry until they're as done as you like. Throw the sausages back into the pan on top of the veggies and bring it to your dinner table as well as a pair of tongs to serve with, the buns and the cheese.




Assemble and then eat your loaded bun while trying to avoid getting the greasy sausage juices all over your face.  :)
