Comfort Food

Every once in a while everyone gets a craving for some "comfort food".

What is comfort food?

The dictionary says:

com·fort food
noun
comfort foods, plural

Food that provides consolation or a feeling of well-being, typically any with a high sugar or other carbohydrate content and associated with childhood or home cooking

What that means is different for everyone.

This was my supper today featuring one of my favourite comfort foods ... mashed potatoes.

Clockwise from the top: Roasted garlic mashed potatoes, a roast chicken breast sprinkled with salt, pepper, dried thyme and a drizzle of extra virgin olive oil, carrot coins and coleslaw.

There was/will be dessert as soon as I get the energy to put it together. I had to take the laundry out of the washing machine first and put it on the line downstairs and I still have dishes in the sink to be washed. After I empty the draining board of the previous batch. :)
