Well, it is obviously very very late. I am still up because I am baking cakes. The sad thing is that I started as soon as I got up this morning, so this has been an all day process. Tomorrow, the real fun begins. I don't know how the hell I'm gonna do this! lol. Hopefully, I have planned it out well enough that I don't fall behind (more than tonight). This is all in reference to my BIL's wedding cakes. Stephanie called me today and asked me if I could make 80 mini's instead of 60!! Crapola! I told her that I could because I am insane. So, I've been trying to figure just how much freaking cake I will need to have. You should see my kitchen, it's covered with cake! I think there are over 15 cakes in there, well, maybe not that many, but I need that many! I kept running out of eggs, I've had to run to the store twice to get more, lol. I wish I had a yolk recipe that was good cause I seriously have about 50 yolks. I'm just gonna toss them though, I don't know what else to do with them. I probably need to bake more cakes, but that's gonna have to wait. I am not going to bake ANY tomorrow. I am going to start on the mini cakes, and they are made of chocolate (and cake), but the oven heats the house way too much. They will melt if I have to bake. SOO, I wanted to get ALL the baking done today. I don't think I did, but I HOPE so much that I don't have to bake anymore! I also finished the boxes, made the filling, and made the flower topper for the main cake. Lots and lots of work! I forgot I was gonna make the fondant today too, but I will have to do that tomorrow. This is going to be insane-o for me these next few days, and I really mean INSANE-O!!! lol. My mom might come up and help me on Friday. I should call Jenn and see if she wouldn't mind helping too. Man, I wish I could go to bed, I'm so tired! And I have to get up in the morning and do all this crap again, but worse cause I actually start the construction of the cake. I'm not actually decorting till I get all the mini cakes made, then I will decorate them. 60 mini's would have been challenge enough, 80 is just crazy, I did not plan for that, and I'm afraid it is gonna throw me way off. Hopefully it will be ok, and I'll get all the crap done that needs it. This week is gonna fly by, seriously. Anyway, I'm gonna go check on the cake now. I hope it is close to done.
