Baked stuffed tomatoes filled with lemon, basil and Parmesan cheese

Dinner today! Again, this week I managed to plan my menu ahead. And today I attempted a rather adventurous dish called, Baked stuffed tomatoes filled with lemon, basil and Parmesan cheese. The outcome? Fabulous! It tasted almost like risotto stuffed in the tomatoes. I never knew tomatoes came with such huge sizes. They are called beef tomatoes. Beefy indeed. The recipe was actually a vegetarian one, but decided to toss in some chicken breast filet to add some texture. Yummm...I think I'm ready to try more adventurous dishes in preparation of my first dinner hosting when my cousins' family come down to London mid sept. I'm sure my mom would be proud!
