This recipe is from a friend who made it for us during a wonderful weekend at the beach. Its a easy recipe for a hearty breakfast.

Strata
• 12-14 slices bread, Pepperidge Farm white bread preferred (their slices are nice and dense), crust removed
• 1 lb. cheddar cheese, grated
• ½ mild Italian sausage / ½ hot Italian sausage- cooked and fat drained (~2 lb.s/~6 links)- or use 4 links of hot to make it a bit spicier! (cut the sausage out of the casings, then cook)
• 3-4 tablespoons of butter or margarine
• Mushrooms, sliced (these add moisture, the recipe calls for 8 oz. but I think that’s way too much, my mom doesn’t put in any at all these days, at the beach I used maybe 2-3 ounces)
• The ‘filling’ can be anything, green peppers, zucchini, etc.
Butter bread on both sides & line a 9x13” Pyrex dish bottom with a layer of bread (cut slices to fit as needed)
Cover with ½ of the cheddar cheese
Then add the rest of the filling
Cover the top completely with buttered bread slices, just as you did the bottom
Topping
• 5 eggs
• A bit less than 3 cups of milk
• ½ tsp salt
• ¼ tsp of Tabasco sauce
• Paprika to taste
• ½ large onion
Chop onion in blender with a small amount of milk
Add the eggs and blend
Add the rest of the milk & spices
Pour over strata, press down lightly so bread will soak up egg-milk mixture, refrigerate overnight
Decorate with thin tomato slices and/or green pepper
Bake 40-50 minutes in a 350 degree oven or until top is browned to your liking
