Lent is almost here, and after some pondering, I've decided to go vegetarian. Its only for 40 days. No red meat, pork or chicken. This means no steak, burgers, pork chops, bacon, pollo rico or chicken wings. I'm going to keep fish and shellfish. I know thats not true vegetarian, but its healthy. (The fish will help me battle against some pre-exisiting health issues.)

I've talked to some of my friends who are vegetarians and got some preliminary ideas. (Next I need to talk to my vegan friends.) I looked through some cook books and picked out some recipes that looked good. kumquatqueen and I went grocery shopping. I picked out the stuff for my meals. I also picked out some frozen veggie meals for lunches. I'm excited to try this. kumquatqueen says she'll even try being a vegetarian with me.

So far here are the meals I plan to try:
- Mediterranean Asparagus and Cherry Tomatoes
- Creamy Spinach and Onions
- Barley and Porcini Pilaf
- Garlic Roasted Potato Wedges
- Pizza with Stracchino Cheese and Fresh Arugula
- Asparagus with Balsamic-shallot butter sauce
- Stir Fried Sesame Asparagus

Recipes will come soon. We'll see how it goes. Wish me luck.
