Look up TX statutes. You may have to bite the bullet and get a lawyer. But it's not surprising that these folks don't want to stick their necks out on this one.

If you successfully defend yourself against an attacker, you can't press charges against him?

That's patent nonsense. See if there's some way to get in touch with a DA; your own lawyer would probably be the best route.
