DIY Hydrangea Centerpieces

I'm planning on doing an arrangment similar to this, DIY because I was quoted nearly $800 through a florist. I have other florists to visit, but I have a feeling that DIY will be my best bet.

I will be doing mine with limes and lemons lining the vase though.

My color is a pink salmon, and I was having a hard time finding the color in silk or fresh until I found this:

I have done quite a bit of research, and this seems like a good deal to me. The only other place I could find good salmon pink roses was at Hobby Lobby (silk).

So knowing that my roses will probably be fresh, is it weird to have silk hydrangea? I've found that Sam's Club seems to have the best prices for fresh hydrangea (20 for 69.16!, 3.46 ea)

Also, I'm wondering if anyone knows how big fresh hydrangea are normally? The silk ones that I found have a 6" diameter, but I don't know how big fresh ones are. I'm worried that they won't "fill" the vase (I'm planning on 5" cube vase).

Lastly, would the lemons and limes affect fresh hydrangeas at all depending on when I put everything together? I read that they need a lot of water (I would either put everything together the night before or day of)
