I have a bajillion avacados and I need to use them up today, or tomorrow at the latest, before they go bad!
Quick, what are your all-time favourite avacado recipes? Bonus points if you can incorporate them into a main-meal dish without making guacomole!

(Place the flesh of two small or medium avocados into the bowl of a stand mixer fitted with the whisk attachment along with 2 tsp of lemon juice and beat until lightened in color, approximately 2 to 3 minutes. Add 1 pound of powdered sugar a little at a time and beat until smooth. Add 1/2 tsp lemon extract and mix to combine. If not using right away, store in the refrigerator.)
