Help with sweetener subs, please? + Gunpowder Cookies recipe

Hi all. I need help subbing two sweeteners in a cookie recipe. It calls for 1/2 cup agave, which I don't have in the house, and 1/3 cup maple syrup, which I'm allergic to. If I were only replacing one sweetener I'd just wing it, but replacing two with different flavors feels more complicated ( Read more... )

If it were me, I'd sub brown rice syrup for agave and molasses for maple syrup.

I would do this as well. And then get some agave next time you're at the store. :-) mmmmmm.... agave!

The problem is that in this recipe the syrups are acting as the binderand liquid as well as a sweetener. So you can't replace both with granulated options. At least one of them need to be sticky liquid to help hold it all together. You could easily sub the brown rice syrup for either. I'm not sure how molasses would taste with the cinnamon and cayenne. You could just use sugar for the maple syrup and brown rice syrup in place of agave. You would need to add a bit of water to the batter if its dry if you choose this route since the recipe uses the sweeteners and oil as the liquid part.

I'd do the same as the first commenter replied. However, I wouldn't do it with blackstrap molasses, if that's the type you have. It's a lot less sweet and it's got a pretty heavy flavor.
