If you have a recipe for stuffed squash that calls for apples, you can make it less dessert-y by using a very tart apple and substituting onions for some of the apples. It'll be a bit more savory, less sweet.

My favorite way to go with squash lately is spicy. Chili with squash is always good (I'm partial to black bean, butternut, chipotle, and lime, but I can't imagine a bad combination). The New Vegan Cookbook has a really good recipe for curried pumpkin, and squash subs well for the pumpkin... The jerk-spiced tempeh with that recipe is also amazing, but sometimes I make the squash part all by itself.

ooh that sounds good. i eat acorn squash plain, or with a sprinkling of cinnamon, but curry sounds delicious!!

i love acorn squash.
i just cut it in half, microwave for 15 minutes, shred some fresh ginger root over both halves, and eat straight out of the peel. :)
