Prep cooking and ice cream cake.

My out of town vegan boyfriend is coming down this weekend and I am trying to do as much cooking beforehand as possible so that I can spend more time making love then making food. (Har har...)

Well, I thought hers was a very funny reply. :)

Anyway, unlike the commenter below, I've had good luck with leftover batter the next day, but if you're even slightly concerned, I'd recommend mixing the dry ingredients and wet ingredients and storing them separately, then you only need to mix the two and you're good to go.

I experimented with the pancake batter in the fridge deal, and it failed miserably. The batter got reallly thick and goopy looking, just being in there for about 18 hours. Maybe you can make the pancakes ahead of time, freeze/refridgerate them, then pop them in the toaster or toaster oven when you want to eat them? When I was little my mom would keep blueberry pancakes in the freezer for quick breakfasts.

Frozen/refrigerated pancakes/waffles are fab.

You can certainly make french toast batter ahead of time - I've done it several times before.

Theres a recipe in either How it all Vegan or Garden of Vegan for overnight french toast apple bake thing I always want to try but have yet to.

They take all of about five minutes to mix..Why sweat pancake and french toast batter?

If you're really that concerned with time you could measure out all of things and store them seperately so all you have to do is throw them together and mix. =)

like someone above said, mix the wet and dry ingredients and keep them seperate. when you're making something with baking powder, you've gotta be ready to use cook the thing as soon as it mixes with wet stuff, otherwise it's ineffective
