CSA Bounty 02.17.09: Massive Productivity Edition

Yesterday was a good day for being productive. While working studiously a main client project I was able to finally cook up a tasty duck rich stock from a carcass we had a couple of weekends ago. latkes: shredded potato, shredded onion, along with an egg and a bit of matzo meal and salt. Mix them all together, fry them up in butter, serve with homemade applesauce and maybe a fried egg ( ... )

Whoa, these all sound insanely good. Sorry about the late response, my internet was down for part of the weekend.

I've never had poutine and didn't realize it was so easy to make it at home. That's a *special dish* because that is going to be heavy! Hopefully we can finally get to Montreal this spring and try them for real. I've never been and have been craving going for the past 3 years. I've heard the food is amazing there.

actually, the beauty of doing poutine this way is that it's significantly *less* heavy when you don't fry the potatoes. Technically, there's a specific, MSG-laden brown gravy, and special cheese curds, that you use for poutine, but I find it works with just about anything. Honestly, if you get to Quebec, there are places that will do poutine half a dozen different ways.
