If you try these, I recommend that after soaking the rice paper, you let it rest on an upside down bowl or something to dry out just a little bit. It's easier to manage that way, and when it's a little drier it will stick together better and not fall apart when you roll it out.

While I just boil the shrimp I usually marinate the beef in a mixture of soy sauce, oyster sauce, salt, garlic, olive oil, and cornstarch (to thicken a bit of a sauce that has all the flavors of the marinade).
Of course, what you put in it is up to you! I love the dipping sauce, though. While peanut sauce sounds yummy, I think the vinegarette lets you focus on the flavor of the spring roll while also making it taste extra crisp and light for summer.
