You know, you would think, that being on one of the barrier islands in Florida, you wouldn't have to work. But me, no. I had to come into work at 12 am. at 12:30am Paco, the other line worker, went home because we were so slow. Jenn! you sound like you are having so much fun doing this externship....which you still haven't told me what it is really haha. When you talk about it you sound like me talking about my fisheries job, different stuff...same passion=)

I am having fun, but I'm ready for it to be over with. My externship is just slave labor. They basically work me as much as possible for as little as possible. But it gives me a lot of experience and a lot of practice. I'm excited that I get to cook and make everything. Not to mention I see some badass fish and I can eat all the oysters I want for free. When do you leave for Florida?

Tomorrow and Tuesday are my orientation, im VERY excited haha. They make you spend the night and crap, but the first day of school is august 26th so i assume a couple of days before that. Man you have to send me a really good fish recipe or something. I usually don't eat seafood, but now that i work so close to fish and people who love it i have been trying to eat it more.=) What kind of fish do you see? i love fish hahah.

Currently my fave fish is the escolar. It's nice and meaty. At luch we serve it with a mango ginger vinaigrette and at nite we serve it with a miso sauce. We get a lot of Tuna in too. Huge tuna. I think the biggest one we've gotten in that I've seen is 98 pounds.
