I was going to ask the same thing myself (everytime I read it, all I could picture were laser gun sound effects :P).
It stands for Voice Over IP. From what was just explained to me, normal phones run in a straight line from point A to point B. VoIP is more like the internet where it's a web and if you are on the phone, your connection won't go out because if anything goes down, your info is rerouted to another line.
I hope that makes sense. I'm sure someone else can explain it better since I just learned about it myself.

For whatever it's worth (or not), the IP part stands for Internet Protocol.
