Is there any chance I would please be able to use this in my cookbook? I am putting together a cook book as a fundraiser because we want to bring Carolena Nerrichio down here to NZ next year, so all my students are busy putting forward recipes on pain of death. Can send you a copy if you like...

Sweet, actually remembered to check for a reply....

Yeah, I got to go to her workshops in Katoomba just recently. The first lot booked out in an hour so all the NZers missed out, but got into the second lot that was made. It was very cool, so now, of course, I want to do more....

Whoah......using coconut milk sounds super yummy! I thought I was pushing my limits by making pies this season using real pumpkins (and butternut squash.) I'll have to try coconut milk!

This sounds delish, and I am about to make it right now. You don't mention when you throw in the sugar, but I'm assuming that happens around the time that the pumpkin and spices go in? Can't wait to try it out!

Oops! Yes, that's right. The sugar goes in with the pumpkin and spices.

I used demerara sugar the last time around, and it gave the pie a much darker (but equally tasty) look.
