This is the way I ship Wincest, honestly. I think the tension is definitely THERE but I don't believe they'd ever act on it (because, honestly? Sam is too straight and Dean is too afraid of ruining what they have) and I kind of love it as just another aspect of how ridiculous codependent and screwed up they are, and I think that's canon.

What I'm going to try to do is have Dean see a lot less of him the more serious he gets with Jess. Not for any real REASON, just because Sam's busy and spending more time with Jess's family and Dean starts going on hunts alone, so they lose touch a little. I think that makes sense and kiiiiinda works with canon? So I'm playing with Sam's freshman and sophomore years, basically.

I think the bit that got me the most was realizing that they really hadn't even been on a rollercoaster. Because they were both so EXCITED, and cocky, and delighted, and then it was like "Oh, crap", and yet wonderful at the same time.
I also love Sam's badass memory. Yes, Dean, Sam remembers all of that. But you've got it wrong because you regularly forget how awesome you are if it will make the people around you look better. LOVE.
Though, with all good fic that includes Jessica, I now want her...and Sam...and Dean ALL TOGETHER AND HAPPY AND FAMILY. Because they definitely all deserve it.
And John too (he, too, deserves commentary). A sneaky bastard in all the right not-quiet-right ways. Ah, John. Always, you are concerned, and it's just hurting everyone.

I'm writing something right now where John is kind of awesome! Still stupid and John about it, but in a way that makes it obvious that he loves his boys...and I'm having a reaaaally fun time contrasting how Dean thinks about his kid with how John thinks about his.

Yeah, John loves his sons. He just...never seems capable of showing this in a way that isn't crushing and a little damaging to them at the same time. *frowns at him while patting him sympathetically at the same time*

I loved the bit with the roller coaster stream of consciousness.
The only thing I was a little confused about was the whole bit about "You know why." Was this supposed to have Wincest undertones or was it more of a bro-love-trumps-everything-even-if-some-people-misconstrue-that-as-something-else type deal? Because I get the overwhelming sense of family between them in everything you've written, this one included. At any rate, it's open to interpretation, and on the whole you did an incredible job with this.
